Abstract
This chapter presents a UAE-appropriate approach to using artificial intelligence as added support—not a substitute for judgement—in teaching food-and-wine pairing for fine-dining service. We address a practical constraint: universities typically do not serve alcohol on campus, yet graduates must analyse dishes, justify pairings, and speak confidently to guests in licensed venues. Drawing on sensory-science principles and hospitality pedagogy, we describe a student-first routine in which learners construct their own tasting notes, rationales, and concise guest-facing lines, then use clearly instructed AI to compare and refine their work. The approach increases practice density, makes reasoning visible, and keeps instructors focused on coaching. We outline classroom applications across service, culinary, teaching, student learning, operations, and cross-cultural communication, and discuss benefits and limitations in the UAE context. Overall, the chapter offers a transferable method that makes pairing logic explicit, repeatable, and assessable.
